It took me a while of messing around with my recipe to get protein waffles that I actually found to be a pleasure to eat, with them often coming out too light and airy, or like rubber on several occasions. Finally I got there, and this is the recipe I now stick with. These waffles are really very good, and with virtually no sugar and around 10g of protein in each one they are a winning pudding whilst you’re ‘being good’.

Ingredients

  • 150ml Skimmed milk
  • 100g Self Raising flour
  • 60g (2 scoops) Vanilla Whey protein powder (I use MyProtein whey isolate)
  • 1 egg
  • Avocado oil spray

Directions

1Add the milk and whey powder to a mixing bowl or large jug (better for pouring later) and whisk until smooth.

 

2Beat the egg into the mixture until incorporated.

 

3Now add the flour bit by bit whisking as you go until all is smoothly blended into a thick batter.

 

4Take your waffle iron and place on a medium to high heat, and spray with the avocado oil. Vegetable oil would also be fine for this, but avocado oil is generally very healthy whilst also having a very high temperature point, helping get a nice crispy outer layer on your waffles.

5Once hot, fill the iron with the batter and clamp it down, taking care not to overfill as this will cause you a big old mess as the self-raising flour does its thing.

 

6Cook for 2-3 mins until each side is golden brown.

 

7Serve immediately with natural yogurt, fresh berries and a drizzle of honey.
